PCA-edu | Online Certification Program

By request from many of our 3000 + members, we learned there is a need for a continuing education program. By putting together our “PCA-edu” division, we are able to offer quality products to the hospitality industry.

"PCA-edu" is your one-stop resource for PCA certification education. With courses in nutrition, sanitation, safety, cost control, human resources management, food education, pastry and beverage courses, you're sure to find what you need.  Our programs are geared toward Food & Beverage “FRONT and BACK” of the house. We offer innovative courses: Safety & Sanitation, Cost Control, Beverage Course, Food Education and Human Resource Management.

We believe in continuing education. You only need to take the certification level (of your choice) ONCE in your lifetime! However, you must complete yearly educational courses to stay certified.

1) Corporate Chef

Certification Level: Corporate Executive Chef

Description: Certified Corporate Chefs... as.... Professional Culinary Educators... These Chefs who travel the country and world teaching all kinds of customers about there products and how to prepare them. Menu deployment, costing, training, to large chains, distributors, street accounts and so on.

It takes a very special CHEF to go out into the sales world (set aside the ego!) and really teach others how to uses there products and cook. BUT most of all apply them (special products) to the menus of the world and help people really make money in there establishments. Helping sales people uses and understand Culinary Arts. And share these Chefs talents with users and other Chefs that otherwise well never get culinary teaching/training in any other way

Requirements: Minimum of 3 Years as Corporate Chef , or 5 years as assistant Corporate Chef

Duration:Certification is valid as long as the Chef holds the position as Corporate Executive Chef, and is a PCA Member in good standing.

  • Food & Beverage Cost Control

Certification fee: $2400.00

2) Executive Chef

Certification Level: Executive Chef

Description: A chef who is the department head responsible for all culinary units in a hotel, restaurant, club, hospital or any other multiple unit foodservice establishment.

Requirements: Minimum of 3 Years an Executive Chef.

Duration: Certification is valid as long as the Chef holds the position as Executive Chef, and is a PCA Member in good standing.

  • Sanitation

Certification fee: $1,800.00

3) Sous Chef

Certification Level: Sous Chef

Description: Supervisor of a shift, station or stations in a food service operation. Must supervise a minimum of three (3) full-time people in the preparation of food. Qualify for this designation include sous chef, banquet chef, chef garde manager, first cook.

Requirements: Minimum of 2 Years in Sous Chef position Supervise at least 2 Culinarians.

Duration: Certification is valid as long as the Chef holds the position as Sous Chef, and is a PCA Member in good standing.

Required Courses:

  • Food Education Course
  • Food & Beverage Cost Control
  • Sanitation
  • Safety

Certification fee: $1,200.00

4) Bartender

Certification Level: Bartender

Description: A Barman who works selling/delivering beverages.

Requirements: Minimum of 1 Year in Server position.

Duration: After completion of Certification program, candidate will be required to successfully complete one (1)

  1. Holds the position as Barman
  2. Successfully completes one (1) "PCA-edu" Continuing education courses per year.

Required Courses:

  • Beverage Education 101
  • Sanitation

Certification fee: $120.00

5) Professional Server

Certification Level: Professional Server

Description: A Waiter/server who works selling/delivering food to the patron/guest/customer.

Requirements: Minimum of 1 Year in Server position.

Duration: Certification is valid as long as the individual holds the position as Professional Server and is a PCA Member in good standing.

Required Courses (provided by PCA-edu FREE):

  • Beverage Education 101
  • Sanitation

Certification fee: $120.00

6) Restaurant Certification

Certification Level: Restaurant Certification

Description: Our Safety program offers guidelines on how to reduce workers comp payments and the early return to work program.

Our website www.ProfessionalChef.com and our Culinary Salons of Excellence & Trade Shows will offer participants the opportunity to showcase their operation and broaden their customer base, while networking with fellow chefs, restaurateurs and members of the Hotel and Food industries. At our Culinary Salons of Excellence & Trade Shows, you will meet who’s who in the industry and also students from local culinary schools - the next generation of chefs and leaders.

Requirements: To participate, sign up 80% of your service personnel, bartenders, culinary and stewarding employees. Once the program is completed, you will receive our GOLD MEDAL for Food & Beverage Excellence. Yearly follow- up programs will be provided through our continuing education programs, if needed.

Certification fee: As mentioned- affordability is the key. We realize the importance that every worker is included and therefore we charge only $40.00 per participating employee and each

$5.00 for printed course materials (all courses are online and may be printed out as handouts).

Marketing / Public Relations: Because of the several levels of classes and tests, this is a great opportunity to market these to the industry. Finally, employers have a measurement tool for potential job applications! We also actively advertise and promote successful establishments.

Founders Message:

Chef Walter Neuhold | PCA FounderThere are many good cooking schools, professional and amateur. There are lots of great places to study the history of the hospitality industry. There are also excellent hotel/restaurant management programs at major universities. But what has been missing, until now, is expert continuing standardized education for the whole Food & Beverage division.

While we will naturally be taking advantage of the culinary teaching skills of our select membership faculty, and while courses in culinary technique will be offered, we want to stress a broader curriculum, including financial expertise, human resources, computer skills, marketing and public relations, and other management functions, and will be utilizing the very best professionals who both work in these areas and are able to teach what they know as our faculty members.
